Elly, the "tseeken" looks moist and juicy and I'm still getting around to trying Quinoa (soon I hope).

The simplest meals are often the best. This looks great. How interesting you make quinoa with pine nuts! I've never seen that and I love it!
I'm a total novice at Lebanese fare, and this recipe is mighty tempting. Now all I need is that chicken and a spice I can't pronounce!
Wb--I couldn't find sumac for ages and then a friend of mine was nice enough to bring me some from MI. I have since discovered that it's available at Penzey's, and so is pre-mixed zaatar.

penzey's is a spice store. not sure if they have them where you are, but they do sell things online very reasonably. www.penzeys.com
Not many this side of the country, I see from their Web site. Make that one, a 2-1/2-hour drive away. Looks like good offerings.
